Well Big Eon, there are so many yet so few you could need depending on how much of the work you plan to do yourself instead of a meat processor. The following site http://www.outdooredge.com/ has some great products you are asking about. The game processor has most of what you would need if not all. They have some other great knives etc as well. Best of luck skinning and processing!

A knife and a saw seems to work pretty well for me. However, If you need to ask what kind of tools are required to do it, I would presume that you have never had the occasion to field dress and then butcher a deer.
I learned by watching other people do it, then later on by trial and error. It' s the natural way of things. You are most likely gonna mess up a little on your first few times.
My only advice is this; don' t over complicate it...Man has been killing and eating other animals since the dawn of time. I' m sure that there are some folks who can do a good job of butchering with just a sharp rock. If you don' t have someone available to show you " how" then there are probably plenty of books and video' s available to show you how.
As a side note, I probably field dressed and butchered a dozen deer before I started getting really good " quality" cuts of meat.
