it's pretty simple, skin it, take off the quarters, back straps, can grab the tenderloins from the side, along with any rib meat if you want.
if you butcher it yourself or need to haul meat a long way from in the field it's worth it, or if it's really hot while hunting it makes sense, but if you're planning on taking it to a meat processor, I'd just gut it and get in there.
