Default Favorite Big Game Meat?

Wondering what if any concensus on the tastiess game meat out there is. Mainly interested in knowing aside from whitetails what most prefer, though I assume many more guys hunt deer than other big game, or have just yet to hunt the others.

If other game meat.....list it below and I'll add it, figured let's keep it to North America though and big game.

Elk, nothing beats a well care for cow or spike. As most know big bulls can be rank if not cared for properly, and in general are not as good to eat, nothing worse than a pan of frying meat smelling like a rutted bull. Back when I was young my parents and grandparents never took what would be considerd trophies today, the bigger the horns the worst the taste. If food price keep going up, hunting to eat might come back into fashion.

if its all well cared for its all great. the other day had elk,muledeer,whitetail,and antelope backstraps on the grill at the same time.could not pick the best all great. antelope gets such a bad rap but we put blocks of ice in the chest cavity and skin right away no ageing and there some of the best eating.

I would have to say there are a couple I haven't eaten on your list but the best meat i have ever had is that of a Axis!!!!!!!!

Axis deer added! not native to the US, but since we can hunt it here I say what the heck, also heard its fantastic, some argue the best venison, though I've heard that of sitka blacktail, anyone had both?

Whitetail would be my first, but I have had antelope, elk, and bison and they were all pretty good.
