Elk is simply delicious. Although Whitetail backstraps would be my 2nd favorite.
BUT, since I hardly EVER get to taste Elk the whitetail choice is the mainstay when it comes to my gourmet wild game dishes.

Tenderized smothered deersteaks in gravy is my favorite. They will melt in your mouth. It's also hard to beat fried deer strips.I've never killed an Elk, but I have eaten some, and it was pretty dang good. It tasted like a mixture of venison and beef. Fried gator is alsovery good. Fried turkey strips and fried squirrel are tops on my list along with deer.

I love just plain old whitetail. I thought elk was too lean, mule deer tasted funny, goat too greasy. I love alligator. Never had bear, moose or caribou, or buffalo.......I had axis burgers and they were great. I also shot a sika one time and thought it was decent.........
