Considered illegal dumping in WV. If on private property, do your own thing, but please do not dump them in the public hunting area parking lots that I use. I have to explain them to my kids...at least have the decency to drag them off the road 20yds or so..
They should have a segment of the hunter's safety course on dealing with the carcasses. I keep mine cold or frozen until garbage day and out it goes..seperated into several bags so the the trash man doesn't get upset.
Professional processors usually ship them off to the rendering plant.
Don't dump them into rivers or streams either. It's water pollution. Yes, you might think that the turtles and catfish clean them up but there is a process of breaking down what remains that is known as BOD (Biological Oxygen Demand). It takes so much Oxygen to break down that carcass and it comes from the disolved Oxygen in the water..Less then for aquatic life..

Hector was that on I-40 East Bound outside of Burlington? Big bodied deer and i saw it the same day but it has disappeared. I am assuming a car hit it and some enterprising person has the Rack at a taxidermist.

Before the season each year we take a back-hoe and dig a pit about 12 feet deep and all remains are placed in there. We then take hydrated lime and place on the remains to keep them from smelling. All blood and water runs through a pipe from the cooler-skinning shed area into the pit. Works real good.

Whatever you do, keep the carcass out of sight from other people. I just have a couple big ditches by my house I dump into. And they're usually cleaned up by coyotes within a few days. If you have a spot that its alright to dump in and away from the public, why dig a hole and bury them? Might as well let the hungry predators salvage whats left of it.
