I know this is a few months old, but it looks like nobody really answered your question of what you can hunt.
MT has predators and non-game animals, both of which can be hunted by non-residents any time of the year, without a license. The list includes coyotes, red fox, raccoon, badger, skunks, weasels, cottontail rabbits, jackrabbits, tree squirrels, and ground squirrels, and I'm probably forgetting something too. There's no restrictions on the type of firearms you can use either. I was born and raised in MT, but I'm no longer a resident there. I go back almost every year and hunt predators and/or non-game and have never had any issues whatsoever. If you're going to be out with somebody that is actively hunting big game it's probably best to keep a copy of the regs in your pack and dog ear the page about predators/non-game. Other than that there's nothing illegal about walking around the woods with a gun, even if it is during big game season.
