Joe's way is how we did it last year at camp. Except we just took some ice from the beer cooler, put it in a bag, and stuffed the bird with all it would hold. We let it hang overnight so we wouldn't have to clean it in the dark. Works great, and you don't waste any camp refreshments. And you'd be amazed at how big a gobbler's head gets after hanging upsidedown overnight. It was kinda scary looking.

Another trick is to freeze a quart milk jug full of water and after gutting, push it up in the cavity to cool the bird down. That way it stays dry if you want to mount the any part of the bird. It doesn't mess up any feathers.
