Whats your favorite way....
to prepare your wild turkey for eating?I've eaten wild turkey in many ways,and the other day for the very first time I took out one of my fall birds and made jerkey out of it!The result was,it was gone in less than a half hour because not only was it excellent to taste but because of these 3 boys of mine that decided it was real good stuff!! <img src=icon_smile_big.gif border=0 align=middle>

I usually do the marinate/grill method for the breasts. Have done the jerky, pretty good but for me too much work and loss of product (due to shrinkage and all). Also usually make a fair amount of venison jerky, so I don't need the turkey jerky.
Lately, I've found I really like to take a nice sized breast cutlet and pound the living hel1 out of it. Once it's nice and flat, I like to stuff with a simple dressing. Last time the ingredients were fresh herbs I have (usually a minimum of basil, parsley and scallion), grated cheese, broccoli, sundried tomatoes, a touch of white wine, about 1/4 cup of bread crumbs and 1 large egg. Combine well in a bowl. Add the dressing to the cutlet, and roll & tuck the ends (similar to a pig-in-a-blanket). Hold together with toothpicks, pan sear in olive oil or butter and then add more white wine and heavy cream. Allow to simmer on medium heat for about 10 minutes, and you should have a nice stuffed turkey cutlet and a delicious sauce. Figure one cutlet per person, I like to serve with rice and fresh greens.
I've also stuffed with wild rice, mushrooms, and herbaceous ricotta.
Try it...nice flavor. Also able to find all those stubborn little bbs by pounding, instead of with your molars <img src=icon_smile_wink.gif border=0 align=middle>

I've tried thr turkey jerky and its even better when you pop a dried cranberry and a piece of walnut in your mouth with each jerky strip.
I would love to try deep fried turkey in peanut oil one day but still like the old fashion way of stuffing the bird whole Thanksgiving Day style. Now you got me drooling!

i like them deep fried...we didnt have a big deep frier so we cut the brests into strips and did it like that..it was great..also i had a smoked one..it was great...nothing like it...on the inside of that shell the smoke makes is the juciest meat ive ever had!

I usually just bake mine thanksgiving style also, with a apple juice and butter mixture poured over the top. Also have included apples in the dressing sometimes. It seems to always come out nice and moist. I am going to have to try the deep frying one of these days<img src=icon_smile_tongue.gif border=0 align=middle>

I cook mine the old fashion way..just like Ma showed me. Recently we had an "emergency clean 'n cook" from a road kill jake (had to do it )There was no damage to the breast. I cubed the meat and fryed it on a griddle mixed with spices. It was poolnite and 10 guys made short work outta that bird...lol
