RE: Which mount
I've got one being done in full strut gobbling. If you check out the hazel creek website they have a shot of this type on there. The only difference is I am having the wings just tipped back and up a wee bit to what the photo shows. It exposes the spurs just a little better. I found a pic of a real gobbler in the exact pose and gave it to the taxidermist. I think this has everything. It hangs the beards with the head sticking out in a gobble, has the full fan, and with a walking pose you have great views of the spurs. And of course the bird doing what we all love the most, gobbling!
I'm building a pedastal with glass door display underneath for custom calls and spur necklace.
I agree that the taxidermsit is the most important point. I would not get it done by one who was trying to disscourage me from a full strut mount. It is the most common pose and if done properly and cared for at home it is fine. Just would make me wonder if he's telling me to think twice about doing it that way.

RE: Which mount
I like this one best - it's not bulky and only sticks out maybe 10-12" from the wall. Easy to keep clean, and displays the beards right at eye level. I had the spurs hung on the board as well. Doesn't take up much space.
His fan is a little sloppy, because I haven't taken the time to straighten them after dusting.
Also, it was pretty cheap (250 I think), which is about half the price of a full mount.
I can take a better picture if you want - he's really pretty in the light (it was a little dark when I snapped the photo).

Here's my gobblin off the limb/half strut mount.
And when you walk in the door.
I have a flying mount coming and the bird I shot this year I'm having done full strut with a smooth breast.
