RE: Pluck, skin or breast?
After having plucked umpteen geese and ducks, a turkey is a dream to pluck. Much, much easier that waterfowl. Just boil some water in a big kettle and dip the bird in there for maybe 20 seconds and the feathers on a turkey pratically fall out. You may have to re-dip it in the water a few times during the plucking. Turkey has way to much good meat on it just to breast it.

I breast mine out, save the drums, and thighs for the crock pot and make stew. Throw in an onion (whole) with the drums and thighs, and the tendons come off alot easier. Don't know why, but it works.
