I've learned to adjust by just loosening the top or bottom set screw just a hair and tightening the top or bottom set screw. It takes practice and it is simple to do. After you set the 20 yard pin the gap should be relatively consistant (except the longest pin settings). As far as center is concerned you need to place each pin head centered on the wire. You might check to see if the pin body is properly seated in the main rest body as the pin body will fall out if you over loosen the vertical adjustment set screws. VERY NICE SIGHT in spite of your percieved problem.
