I'm gonna say go with the 25-06. I don't know how readily available the ammo for this gun is though. But if you reload, you should be fine. The 243 is a good gun, but I'm gonna say it's kinda light for deer. The 25-06 shouldn't damage a coyote pelt too bad if you place your shots right, and it'll drop a deer with the little extra power. A bunch of deer have been killed with a 243, but a bunch have been wounded or lost with it too. So I'd go 25-06.

.243, 25/06, 257 Roberts or Weatherby, 6.5 x 55 and the .260 are just fine. The .223, though on the light side for dual purpose, will work if you are a good shot, and the .308 can work too but pushes the upper limit for your varmint shooting (read damage). You have so many choices....unfortunatley we can only shoot 'em 1 at a time.....(sigh).
My own personal opinion would be a .243--great for the yotes and smaller predators and good enough for medium deer with well placed shots. You could probably even get by with 1 load for both.
