Give Monksville Sports a call, http://www.monksvillesportshop.com/, (973) 728-5154. I think it is the owner who does the butchering at his house, he is located about a half hour past Warwick in New Jersey, not too bad a ride. By the way, the Sports shop is a very nice Archery Pro shop with some very helpful, freindly people working there.
Hope this helps

Check out Deserto's Deer cuttings, exit 116 off of the Quickway. I think they charge about $100 bucks to cut and pack a whole deer and provide frozen. That includes uncased ground sausage. Price can vary but thats what I would estimate. A wee bit expensive, but give em a call it may be lower.

great butcher
There is a great butcher in pine bush ny. they use heavy duty vacuum seal bags that last like 3 years or so in the freezer. they also cut it like ya want all boneless. i've never had any hair and they guarantee you get your own deer back. its Seamans Deer cut 845-744-3024. I think they cost $100. for a basic cut.
I dont like desertos. they are charging $100 this year i think. they cut the head off the deer when you get there and through the deer it in a pile, there is no way to know what deer you get back. and they use trays like in the store so it doesn't last in the freezer.
