I use the Lansky and have both the Diamond and stone inserts. These will do a great job getting a real good edge on a knife. Once thats done I use the EDGE MAKER sharpener . Just a couple pulls through that and the edge will be back good as new. I like high quality very hard knives but once they get dull then they are much harder to get sharp again. The best edge holding knife that I have is a Cold Steel Master Hunter. What I use the most is a small Buck folder. Buck holds a fair edge and the small ones are easy to resharpen. I hate big long knives anymore. To much work to sharpen.

For most hunting knives I use the lansky, coarse when breaking an edge then med, fine stones and a leather strap. You can accomplish the same thing with less steel removal with a leather strap as using a diamond finishing stome, plus we all have old belts laying around so much less costly. It is probably one of the easiest systems around, it does have some limitation if doing blades larger than 7-8" though. However most hunting knives are a non issue on a lansky.
Accusharp works but will run you into new knives much quicker than stones or steel sharpeners. Same can be said for most electric sharpeners. Reason being it takes more steel than is really required, which will weaken and take the blade down in a shorter time then stroking it with a lansky, wet stone, etc. It will give you a quick edge but it will also dull quicker and like mentioned down size the life of the blade at the same time.
High grade knives wet stone by hand. Boning knifes steel hone them.
Choice is your but the Lansky is pretty much as easy as it gets for a sharpening system without breaking the bank. Buy the 3 blade system and grap an old belt...your set to sharpen knives.[8D]
