My butcher hangs mine for three days at just above freezing. Excellent flavor and tender.

Soak it for a week in a cooler add a little whitevinegar.. Change water daily. Cut up and put in the freezer... Just had some today that I got last month, D-licious!

Yes, that works good if you have a walkin cooler. If you butcher your own it is best to soak them ice for a few days.
