So accuracy is one differene, my exp with the 270 is it lacks it.
not saying the 7 mag is a 308 based case, just saying the 06 case aint on par with others, 7 mag included.

For the same reasons ridgerunner says I'd go with the .270. IMO the little extra you get in MV and ME isn't worth the extra amount of powder, recoil and muzzle blast. True the 7 mag does have a slight edge with bullet selection and just a tad better as an elk cartridge. But for deer, no practical difference. And for anything larger than deer, I prefer a min of 30 cal.

my most accurate rifle uses a 270 as the parent case, the reasons the '06 based cases aren't used much in competitions has nothing to do with accuracy, the 6.5 Gibbs, 6.5/06, and its AI'd brother have won its they're share of 1000 yd benchrest comps and they are all based off the '06.

ehhh
the 308 put the nail in the coffin for the 30-06, its grouping was about half the size of the 06 when it first came out and competed.
doesnt the gibbs have a different shoulder. and I know the ackley does , lot different than the 06 case.
I never heard of a 270 being used for competetition, nor the 06, or not anymore anyways, not since 1952 when the 308 killed it.
Personally never had luck with the 270 as a tack driver.

I own both a .270 WIN and a 7mm Rem Mag in a Remington 700 BDL...I also own a 270 WSM. Love both the 270 and 7mm (.284) and as other have mentioned, only .014 difference in bullet dia. Over the years I have had good luck with both rounds and have taken several deer, elk and pronghorn with both. That being said, I prefer the 270 (and really prefer the 270 WSM) over the 7mm for 3 reasons...1. 270 has more bullet options available, 2. the 270 has less recoil, 3. reloading non-belted ammo is easier.
