...I'm still experimenting ..my next batch I'm trying 50- 50 Corn flour and yellow corn meal with 2 tables spoons of cajin seasoning..
These were straight corn flour and 1 tablespoon of Creole..They were good..BUT I'm still working on them.
now beer batter is very good too and much simplier..
Ingredients
[ul][*]1cup Bisquick[*]1/3cup cornmeal[*]1teaspoon salt[*]1/4teaspoon pepper[*]6ounces beer[*]2lbs fish fillets [/ul]
I like fish..[8D]

I'd love to have a mess of big ones to eat. Unfortunately they aren't like they were arond here...plus you're not supposed to eat them in most of the waters I fish...too polluted.
