You can't make a silk purse out of a sows ear, get the Summit as a minimum.

Do you think 245 fps is enought to take down a deer humanely???
Do you think it would be a good idea to get the Barnett then a few years down the road ( when i have more income) go get an excalibur?

the summit is a good rugged, reliable starter. had mine for going on three years now. yea they are better crossbows out there, but i dont own a weatherby or a browning shotgun either.

The speed of the arrow is only part of the fact. IF you achived the 245 fps with an arrow that weighed 600gr, then yes it would be plenty if you kept the shots at close range. Your Kenitic energy would be more then enough. But if that speed was achived with a light weight arrow, then I would doubt that it would be good enough at standard ranges (20-30 yards).

My bow, the Excalibur Relayer (150lb) shoots 270-275 fps with a standard weight arrow (2216) and gives me enough KE for deer. Arrow speed by itself does not tell enough about the bows capabilities, you need to also factore in the weight of the arrow as well. You must remember that even with the most powerful bows (Exomax 225lb) if you hit in the wrong place, it will not have enough KE to do the job. Shot placement is the most important aspect.

Do you think it would be a good idea to get the Barnett then a few years down the road ( when i have more income) go get an excalibur?
Honestly, I would save my money for a better quality bow, even if it ment that I had to wait another year or two. One that I would not have to replace in a couple of years. One that I would be able to have full confidance in. But that is me and my opinion. Now since you want to get out there hunting with a bow now, and you have a limited budget, then it is all you can do ... correct. As long as you know what your getting in quality and that you have made an educated choice, then do what you want to do. But keep in mind that these cheaper bows will not preform as well as the more expensive bows.

Goood luck/
