Pecans
Well I have about 5lbs of pecans and need some ideas on things to make with them. I have 3 very good pie rec. but would like some on spice or sweet pecans.
Anyone have anything like this?

toast em in a pan with cajun seasoning and at the very end brown sugar.. or you can just freeze em for anything you;d use nuts for, real good thing is pecan and wild rice stuffing for just about any critter you wanna use it with, also chop em up real fine (if you use a processor becareful cause you;ll turn it into pecanbutter aka peanutbutter with pecan) then toss it with cornmeal and coat fish fillets and fry or bake, i find walleye, perch or any of the sunfish family work best.

pecans and wild rice stuffing, where did you find this?
The pecans and fish sounds good but my question here is are perch/sunfish good? We use them for fish bait as they do not get much larger than the size of your hand here.

Chocolate covered pecans are always high on my list. I also chop and add them to the topping on fruit crisps. The last one I made was in a dutch oven. It was an apple crisp, and it went down very well with vanilla ice cream.
For my next experiment, I think I am going to put them in a bowl, and mix them in a little melted butter, sugar, brown sugar, and cinnamon. Then I may bake them for a while in the oven. Now that final exams are over, I will have some more time to experiment.

didn;t find it, just made it. i;m a chef by trade so usually just throw stuff together in a whirl of mental fury. but if ya want a recipe i can;t conjure one up.
as far as the perch and sunfish, yes i do fish for them, and their very very tasty.. found the best tastin ones come through the ice. but you bein in texas that might be a prob. been known to get perch up to 14inches (yellow perch that is) and i;ve gotten sunfish, bluegills, redears, shellcrackers big enough to lip like a largemouth.

melt some sugar in a small amout of water(just enough to melt it) then take the whites of a couple eggs and whip till they just start to turn white(and fluffy)not to peaks.roll pecans into this , then sprinkle a little(just a little) lowyers season salt,ya season salt.put in oven till they turn brown.watch to not burn.

Because of their size (normally hand size, but there definitely are larger ones, and they are plentiful), and down here in Ga. we cook them in a cast iron frying pan. Nothing better when river fishing, catch enough to feed the crew, clean and cook them on the river bank. As a matter of fact, me and 2 or 3 buddies keep the cooking oil, meal, salt and pepper, and frying pan in our boats all the time. Where ever we meet up at on the river we get out and start cleaning and cooking.

Pan fried fresh Green Beans. Lightly Roast Pacans in seperate pan. Throw them on String beans for last 10 minutes of cooking. Man that's good! I always keep a bag of sliced pecans in Kitchen.
