At one time there was warnings about eating pheasant because toxics would collect in the fat. Fish and Game departments explanation was pheasants habit of eating planted treated seeds in grain crop areas. In years gone by, the big concern was mercury content. If the practice in your area is to plant untreated seed for crops you are probably ok.Some seed is treated for blight, mold, insects, ect....

I trim all the fat off. I don't like venison fat, but the pheasantis tasty.
