Put a good cut on contact 2-blade head on an arrow weighing around 10 grains per pound, tune it up good and shoot it straight, keep the shots within 20 yards. You do those things and even a 40-45 pound recurve will do the trick - at well under 40-45 ft lbs of KE. (If I ever saw a ram as big as a moose, I'd probably run for my life! )
You use replaceable blade heads (or especially mechanicals!) or a lighter arrow or shoot further than 20 yard, then you'd need more energy. A LOT more in the case of mechs.

What do you mean, like mouflon sheep and that sort? A 35 lb compound bow should get a pass through. I started to hunt with a 34 pound bow and I easily got complete pass thrus on animals like feral goats which are fairly small at 40 to 100 lbs. Never tried for the sheep but they aren't much bigger. If the animals are 100 - 200pounds, I recomend 40# as a minimum draw weight even though 30# will easily take out both lungs and probably get a pass threw too.
