I normally take a small stick with a croch in it and put it threw the heart and liver to carry out. If no helpI would stick it threw them and toss it inside the cavity... Just the way I have been showed how to do it..

If I didn't butcher my own I think the heart would be a great way to get a piece of that deer right off the get go. It looks like one of the best cuts of the whole thing.
I'm an inner loin cooked in olive oil and onion soup mix and eggs breakfast eater myself.
Somebody gave me some elk last night at a party. Hd some this morning. Got a get me a few of them.
