Maybe you need to find a better butcher. I probably get more meat from the butcher because I don't know what the heck I am doing. And I don't have a place to do it, or a grinder to make hamburger. Cost me about 50 bucks and I go home with 3 to 4 grocery sacks full of meat cut to my specifications and I don't have to get rid of any of the waste either.

There's really two sources of rib meat, depending how you cut it up. There's a layer of muscle over the ribs, it's thin, but there and you can take it off and grind it up, if you are not careful while skinning you can end up with this on the skin!
then between the ribs, takes a few seconds to get it and toss it in the ground.
I love ribs! but never found a way to get deer ribs to be worth cooking. Elk ribs on the other hand are AWESOME!

Either the raccoons get them or we give them to our garbage man and me makes soup out of them. Whatever makes them happy, its good to have the garbage man on your side when you are throwing away things such as rolled up carpet and old furniture!
