The question is though, would you mount that set of horns?
We have our fair share of Mexican descendants around here......and if I knew of a needy family....I'd surely "think" about shooting one of them.
Otherwise.....I guess a good old fashioned photo op. might just have to suffice.

I've nevr eaten it myself but a friend of mine used to raise one goat per year. He would cook it until the meat fell apart (he probably pressure cooked it for three days) and then he seasoned it and used it in tacos and taquitos.

Down in Texas I saw a real nice spanish goat with horns that looked to be about 4' from tip to tip. I thought about stalking after it but the thing was about 100 yards away and I wasalready choking onit's smell. I decided there was no way, should I actually kill it, that I'd be willing to put any part of it in my luggage for the flight home. [:'(]
Back at camp I asked the guide how they tasted and he replied "You how they smell, that's about how they taste."
It would have beena neat skull mount tho'.
On that same trip I did shoot a nice corsican ram.So did my ex. SoI ended up with two rams worth of meat. By itself the meat was completely nasty. Some of it I ground up and made into gyro meat. It was okay that way.
I'd also put some of the meat in a pot with water and seasonings and boiled it for awhile and then changed out the water and boiled it some more and then changed out the water and then after the third water change it wasn't 'ramy' any more. I'd then chop it up, season it, fry it and made enchiladas out of it. It was 'good' that way, but anything would be good after that much trouble.
That first change of water smelled so nasty that it actually would make me gag. ...and if it gags me... that's really something. [:'(][:'(][:'(]

Ahhhh the goat story... one of my favorites to share!
My best friend Kevin, and our other buddy James went to (of all places) West Virginia to hunt deer back in the mid-late 90s (we were like sophomores in High School). Apparently they were walking down an old abandoned coal mine railway track when two does ran across about 100 yards down from them. If I recall Kevin was shooting a Mosin Nagant 7.62x54R and James an Enfield .303. Both of them had iron sights. They each shot once at the deer on their respective sides. Kevin's fell dead at the shot and James' ran down into the woods about 50 yards and expired. Upon close inspection.... sure enough... a pair of brown nanny goats.... perfect imposters of deer to boot. After contemplating their situation they figured that they'd bring them back to my Dad... since he is a hell of a cook... figuring that Mr. Martel can make anything taste good. And I must admit.... with a little Cavender's..... it was pretty damn good.... it actually reminded me of lamb.

I honestly wonder Jeff if it's some sort of exotic something. Goats aren't bigger than deer at all. We have goats at camp (see a picture of Blanch White and her kids below [8D]) and I've been around goats my entire life almost and never seen one that is even as big as a deer, much less bigger. Never eaten one, but have eaten lots of goat cheese!!

I was born and raised on goat meat and milk.
A billy is gonna taste like crap and tough.
We used to castrate the young billy's ( about a week old )we did not want to breed and when old enough we bucthered them.
