The first time I butchered a deer, I used what I had at hand. A couple of Rapala fish filleting knives. A large one and a medium sized one. They work great for boning as well as slicing steaks. I've done it so long, thats all I'll use.

They also keep an edge real well are easy to sharpen and if they get a little dull while your using them hit them a few times with a steel and you're good to go. I'll only sharpen mine about once a year.
