We hang all our deer in a butcher shed for 2-3 days usually. If its too warm, we pack them in ice, and if they lay we prop the legs open.

My uncle built a cooler and butcher shop at the farm I hunt so we do it all ourselves.
The farmer bought a grinder and all the other goodies for processing.
We make the burger but send out the rest for sausage.
Usually let hang 3-4 days in 38temp.
