Running low on backstraps and hamburger meat... (running low means I've probably got about 30 lbs. of burger meat left) but have probably a whole deer's worth of round steaks, shiskabob meat, and roasts...

I'll be getting REAL low come Oct. 1... that's why I have to take four a year, minimum... we eat a lot of venison around here.

2 years max. I wrap all my venison steaks in Butcher paper twice followed by a freezer bag.

Zero freezer burn even after 2 years.

I still have plenty, I should have enoungh to make it until November. Only got 1 or 2 packs of backstraps left but I have a load of sausage and burger. I just brought in two hams to a guy at work to make some room in the freezer, I normally would keep them for roasts but this guy is a good friend and doesn't really hunt and he and his family always make good use of it. I still have a deboned ham roast for myself and about 4 shoulders which I will cook all at once for my award winning venison barbeque. Well maybe it didn't win any awards bit it's mighty good.

I have two packages left, both vacuum sealed as well. That is definitely the way to go for keeping it best in the freezer.

All year long. Had backstraps last night. Got some roast thawed for BBQ pulled venison for the weekend.
Vacuum sealers are great.

That there's a great idea.

Be right back.

OK.....We're having the same thing. I've got a big 'ol pig cooker that needs using.
