RE: Knife Sharpener???
A wet stone. Knife sharpening is becoming a lost art. Granted it takes quite some time to put a good edge on a blade, but it's well worth the effort.
You have to start with a good knife. Those stainless steel knives, I just throw away.
It will take me about 2 hours to sharpen my knife, but once I'm done I can skin about 10 to 12 deer with it (hitting bone sometimes) and it's still razor sharp.

I use a gatco edgemate carbide sharpener it works great on hunting and butcher knives. I got it at Jays i think it was like 16.00. It gives knives a great edge and can't even tell its been sharpened.

Here is another vote for the Lansky system. My dad has used it for years and he gave me one a few years ago. It works great. I just did 2 knives the other night while watching the ball game.

I use a diamond-stone to sharpen everything. It's just like a wet-stone, only you can use it dry in a pinch. I've had the same one (red) for I don't know how many years. It doesn't seem to wear out or get clogged. I keep it clean though.
