Bibs ultimately are warmer as the cover your kidneys with another layer. And you can strip down to what you need. Coveralls are nice for me because I can slide into them quick when I get to my hunting spot. It's your preference really.

I used to wear coveralls, and I have also worn bibs.... I will never wear coveralls again. Bibs are much more convienent. They are more comfortable, and they are more versitle.

Bibs and a good jacket/parka is how I've been doing it the past few years. I use to use coveralls because of their ease at getting them on and off, but since changed over. I like to use the coveralls when I am just setting up a stand or scouting, seeing as I can just put them over some plain clothes to mask some of the scent.

The best thing with bibs is that you have better movement in them. With coveralls you can't raise you arms up as easy due to the one piece design.

I use bibs with a jacket over after I get to my stand. Never tried coveralls so I can't make the comparison.
