This is kinda in the wrong forum but...
45 degree angle of the knife on the stone. as many times on one side as the other. use oil or water (one of the 2 not both) liberally. Voila. You gotta Razor!

I've done the Lansky, Gatco, Arkansas stone route......sharpening by hand is WORK. I used to enjoy the labors of sitting in front of a hunting video wearing my hand into a claw turning all of my knives into edges I was happy with.
Now I'm 30yrs old and officially lazy.
I got a "Chef's Choice" 120 for Christmas and am in knife sharpening heaven!
It's a bit pricy ($120ish) but worth every stinkin' penny. 3 different grinding wheels that put a very precise bevel on your knife. The best part is that it6 doesn't chew a bunch of metal from your knife to do so.....very small precise and SHARP 'Tri-beveled' edge.
I can get a knife sharp enough to shave with in about 1 minute.
I used to dread dulling my knives.....now I couldn't care less because this thing is almost FUN. You won't have a non-dangerous knife in the entire house!<img src=icon_smile_big.gif border=0 align=middle>

Floyd, some inferior knives can't be truley sharpened. If you have a good knife than I suggest the moon sticks that consist of two crock sticks sticking up at set degrees from a piece of wood and you just run your knife between the sticks resulting in razor sharpe success in no time at all. I use these on my stainless steel and high carbon knives as well as fillet knives. They are less than 10 bucks, but you gotta start off with a good knife. Good luck, Bobby
