I agree with rack attack, the color is not determined by rubbing. Like he said the majority of rubbing is done at the base of the anter, as such usually the anlters are lighter the further out from the base. I personally think its based on genetics. Some are blondes some are brunettes.
I used to hunt a lot in huge grass fields where the deer are exposed to the sun year-round and the few trees that did exist were all basically the same type. I saw some deer with very white antlers and some deer with very dark antlers and a lot somewhere in between. The only conclusion I could reach is that some genetics must play a large role in antler color.
