I love smoked feral pig. One time down in Arkansas, the guy who ran the hunting club brought out some cold smoked tenderloin that was crazy good.

This scared us all to hell ( or at least me!) when I shot, I saw the hog drop on the spot. We celebrated, I ran to the truck to reload just in case and bam! We could not find her!

Turns out she rolled onto her side and the grass sprung up and hid her.



I saw the ribs moving up and down very shallow and I decided to make sure she was down for good. After gutting, the ball had skimmed the heart. She wasn't going anywhere, but Floyds hog story scared me a bit and so I made sure to take no chances lol. I shot a second time off hand at around 10 yards. With a flintlock!

You need to take some of that pork side (just above the belly meat) and red cook it. You basically braise the meat in soy sauce, dark sweet soy, sugar, garlic, onion and rice wine or dry sherry. The belly may work fine too since it should be a bit leaner than domestic pork belly. You want plenty of fat though for braising pork.

Its called Hong Shao Rou...google it or red cooked pork for recipes. Its delicious. I just made something very very similar for dinner tonite.

My brothers trapped hog.


On our last day, we drove up to a trap and found 2 small 20-30lb hogs in there. They were cute as heck but we were there to help out with the hog problems. They were taken pack whole, minus their heads, and were butchered tonight and sealed away for use later on. Next time Floyd, we let them loose, I got a little choked up over them to be honest lol.
