I have seen elk walk by a fresh gut pile and pay no attention to it.

Depending on the local wildlife(ie:'yote's,foxes,'coons,skunks etc.),I've seen gutpiles and even carcasses disappear almost overnight.That gutpile may be already gone and not be a concern at all.If anything,the deer/elk would probably be more concerned with the presence of coyotes or wolves than with the pile on the ground.
